The Niko Romito Chocolate Colomba is a soft and delicious leavened cake, enveloped in notes of citrus and white flowers and enriched with large chocolate flakes. It has an intense taste and a balanced sweetness. Covered with a crunchy praline of almond and raw beet sugar, the Colomba has an artisanal production process of about 60 hours. The three fermentation phases and the four dough processes give this great traditional leavened cake a light, soft and perfectly aerated texture.

Sourdough starter, organic soft wheat flour from the Italian agricultural supply chain, organic egg yolk, organic Bourbon vanilla beans, dairy butter, citrus honey, fine Tanzania chocolate in large irregular flakes evenly distributed in the dough. The addition of an emulsion of organic Sicilian almond to the ingredients, along with cinnamon and organic lemon essential oils, gives delicate floral notes and a specific creaminess to the dough. The absence of preservatives and the reduced use of butter in favor of vegetable fats results in a shelf life of 60 days.
